ZESTY Ginger Low FODMAP Meatballs
Looking for a quick, flavoursome low FODMAP dinner? Look no further!
These scrumptious meatballs are bursting with zesty ginger goodness, and you can make them with minced meat (chicken or beef) for a delightful twist. Plus, they’re a breeze to whip up in just one pan! I am using my fave black steel pan for these!
Serves 4:
Ingredients:
- 500 g’s minced meat (chicken or beef)
- ¼ cup finely chopped fresh coriander
- ¼ cup NOGO Zingy Ginger Sauce
- 1 egg
- ½ tsp salt
- 1.5 tblsp gluten-free Tamari or soy sauce
- 1 tblsp sesame oil
- 1 tsp lemon juice (optional)
- ½ cup oats or bread crumbs
- ½ cup green spring onions (finely chopped)
To serve:
- Cooked white rice (enough for 4 people)
- Steamed baby carrots or Asian style vegetables, finely sliced (enough for 4 people)
- 1.5 tblsp toasted sesame seeds
- NOGO Zingy Ginger Sauce
Instructions:
- Preheat your oven to 180 degrees
- Mix the minced meat, coriander, NOGO Zingy Ginger Sauce, egg, salt, tamari, & sesame oil
- Blitz the oats until coarse, then add to the meat mixture and mix
- Shape the mixture into balls then place them onto a baking tray
- Bake in a preheated oven for about 20-25 minutes, or until browned
- Plate the meatballs with steamed rice and steamed carrots (or mixed steamed Asian style veggies)
- Drizzle with the Zingy ginger sauce
- Garnish with sliced green spring onions and the toasted sesame seeds
