ZESTY Ginger Low FODMAP Meatballs

 

Zest Ginger Meatballs with steamed rice and Asian Vegetables

 

Looking for a quick, flavoursome low FODMAP dinner? Look no further! 

These scrumptious meatballs are bursting with zesty ginger goodness, and you can make them with minced meat (chicken or beef) for a delightful twist. Plus, they’re a breeze to whip up in just one pan!  I am using my fave black steel pan for these!

Serves 4:

Ingredients: 

  • 500 g’s minced meat (chicken or beef)
  • ¼ cup finely chopped fresh coriander 
  • ¼ cup NOGO Zingy Ginger Sauce
  • 1 egg
  • ½ tsp salt
  • 1.5 tblsp gluten-free Tamari or soy sauce
  • 1 tblsp sesame oil
  • 1 tsp lemon juice (optional)
  • ½ cup oats or bread crumbs 
  • ½ cup green spring onions (finely chopped)
To serve:
  • Cooked white rice  (enough for 4 people)
  • Steamed baby carrots or Asian style vegetables, finely sliced (enough for 4 people)
  • 1.5 tblsp toasted sesame seeds    
  • NOGO Zingy Ginger Sauce
Instructions:
  • Preheat your oven to 180 degrees
  • Mix the minced meat, coriander, NOGO Zingy Ginger Sauce, egg, salt, tamari, & sesame oil
  • Blitz the oats until coarse, then add to the meat mixture and mix
  • Shape the mixture into balls then place them onto a baking tray
  • Bake in a preheated oven for about 20-25 minutes, or until browned
  • Plate the meatballs with steamed rice and steamed carrots (or mixed steamed Asian style veggies)
  • Drizzle with the Zingy ginger sauce
  • Garnish with sliced green spring onions and the toasted sesame seeds
