Vietnamese Chicken Baguette

Serves 4
Ingredients
- 1 Baguette (sourdough or GF)
- 1 cup pickled matchstick or Asian cut carrots
- 1 cup thinly sliced Lebanese Cucumber
- 1 ½ cups Cos Lettuce
- ½ cup Coriander leaves
- 1 tblsp hot sauce (optional)
- 2 tblsp mayonnaise
Method
Pickled carrots:
- Grated carrot or matchsticks
- 6 tblsp Rice Wine Vinegar
- 1 tsp dark brown sugar
- Mix in a jar. Let sit for 10-20 minutes
- Drain on paper towel
- Cut baguette in half (not quite cutting through to the back of the baguette, so the back part stay intact and keeps ingredients held inside.
- First put a layer of Cos lettuce
- Then a layer of cucumber
- Add a layer of chicken and top with the NOGO Zingy Ginger Sauce
- Add the drained and dried pickle carrot in a layer
- Top with coriander leaves
- Add Chilli Sauce (optional)
- Add a thin line of mayonnaise (optional)
