Pasta with Vodka
Recipe by Jaycee, Jay's FODMAP Kitchen
Ingredients:
- 1 tbsp garlic infused olive oil
- 1 jar NOGO Classic Pasta Sauce
- 150ml thickened cream (or lactose free if you prefer)
- 60ml vodka
- 1 tbsp butter
- 1/3 cup reserved pasta water
- 1/4 cup parmesan cheese
- Pasta spirals (gluten free if you prefer)
- Basil leaves to garnish
- Salt and pepper
Method:
- Heat the olive oil in a large saucepan
- Add the jar of pasta sauce, and stir to heat through
- Prepare your pasta to its cooking instructions. Remember to reserve some pasta water
- Add the thickened cream. You want the colour to be Hermes orange
- Add the vodka, salt and pepper and allow to simmer for a few minutes
- Once the pasta is cooked, add directly to the sauce, along with the butter, parmesan and reserved pasta water
- Simmer until everything is incorporated and serve immediately
- Garnish with more basil and parmesan because it would be rude not to! :)
