Tofu Fried Rice

 

Serves 4

GF, DF, Low FODMAP, Vegan

Prep and cooking time: 35 mins

A healthy, delicious  meal that the whole family will love.  A perfect meatless meal for the days you want to eat more veggies!

Ingredients 

  • 2-3 tablespoons Satay Sauce with Turmeric
  • 250g firm tofu
  • 1 red capsicum, diced
  • 1 carrot, diced
  • ½ cup frozen peas
  • 1 cup brown rice(uncooked)
  • Fresh basil
  • Extra virgin olive oil

Method

  • Cook rice in rice cooker until 90% cooked, as per rice cooker instructions (usually approx. 25 minutes)
  • Heat extra virgin olive oil in a pan and add tofu, cook until a light golden colour
  • Add capsicum and carrot, along with frozen peas, to pan, and combine all ingredients
  • Add 2-3 tablespoon’s Satay Sauce with Turmeric, mix thoroughly
  • Pour cooked rice into the fry pan (including any excess water,). Mix all ingredients together, then cook off any extra fluid

Serve and garnish with fresh basil.
