Tofu Fried Rice

A healthy, delicious meal that the whole family will love. A perfect meatless meal for the days you want to eat more veggies!
Ingredients
- 2-3 tablespoons Satay Sauce with Turmeric
- 250g firm tofu
- 1 red capsicum, diced
- 1 carrot, diced
- ½ cup frozen peas
- 1 cup brown rice(uncooked)
- Fresh basil
- Extra virgin olive oil
Method
- Cook rice in rice cooker until 90% cooked, as per rice cooker instructions (usually approx. 25 minutes)
- Heat extra virgin olive oil in a pan and add tofu, cook until a light golden colour
- Add capsicum and carrot, along with frozen peas, to pan, and combine all ingredients
- Add 2-3 tablespoon’s Satay Sauce with Turmeric, mix thoroughly
- Pour cooked rice into the fry pan (including any excess water,). Mix all ingredients together, then cook off any extra fluid
Serve and garnish with fresh basil.
