Chicken Fajitas

Ingredients
Fajitas

Jar NOGO TACO Seasoning
-
750 g chicken thigh fillets

1 cup green part of the spring onion, diced

3 bell peppers (mix of colours ie red, green, yellow)

Olive oil for frying the chicken in a pan

Juice of 1/2 lime (to taste)
To serve
-
NOGO Jalapeno Salsa (hot or mild)

1-2 packs which corn tortillas (or wraps), rice or baked potato

Sour Cream

Avocado
Instructions
Marinade chicken

Marinade the chicken with the jar of NOGO TACO Seasoning, if you can marinade for an hour to overnight (or freeze for a later date).
Cook

Bring chicken to room temperature

Heat fry-pan
-
Add olive oil
-
Fry marinated chicken in the pan until cooked through

Set aside and place on a platter for slicing

Whilst the chicken is cooking

Finely slice the Capsicum
-
Chop the spring onions (green part only)
-
Pan fry the capsicum until cooked
-
When the capsicum is cooked, add the spring onions and stir on medium heat for 1 minutes and then remove from heat (they should wilt, not darken in colour).
To serve
Spoon the chicken mixture into a bowl or platter
Serve alongside avocado, Jalapeno Salsa and salsa and tortilla wraps

Tip:
If you want to use something different this dish can be served alongside rice, taco shells or corn chips.
Make extra of this mixture and freeze for a later date or make extra and have leftovers for the next day…
Rather than use wraps, serve in a sandwich, make a toastie or serve with rice or baked potato.
