Slow cooked shredded chicken and Cranberry Jam Mayo on Sourdough Toast, served with Cheese and Salad

Ingredients
Toast:
- Slow cooked shredded chicken
- Soft cheese
- Watercress or other preferred greens, such as spinach or rocket
- 1 slice sourdough or gluten free bread
Cranberry Mayo:
- 2 tblsp NOGO Cranberry Jam
- 1 tblsp mayonnaise
- 1 tsp lemon juice
- Salt and pepper
To serve:
- Soft cheese
- Preferred greens, such as rocket, spinach, watercress
Method
Prepare the Cranberry Jam Mayo:
- Spoon into a small bowl 2 tblsp NOGO Cranberry Jam, 1 tblsp Mayo and 1 tsp fresh lemon juice
- Mix with a spoon until smooth
- Add salt and pepper to taste
- Set aside
Prepare the toast:
- Toast sourdough and place on a serving plate
- Generously spread toast with Cranberry Jam Mayo
- Layer slow cooked shredded chicken on top of the Mayo
Serve with preferred soft cheese and greens, such as watercress, spinach or rocket on the side.
