Scrambled Tofu

A delicious, quick and easy meal that is perfect as a brecky, lunch or dinner.
Serves 2  
Gluten Free, Low FODMAP, Vegan  
Ingredients:
  • 400g firm tofu (one block)
  • 2 tsp turmeric powder
  • 2-3 tsp nutritional yeast
  • 1 tbsp plant-based milk
  • Fresh parsley
  • 2 pieces gluten free sourdough toast
  • Nogo Sweet Capsicum Relish
  • Salt & Pepper
  • 1 tbsp EVO
 Method:
  1. In a bowl, use a fork to mash firm tofu until it mimics the consistency of scrambled egg
  2. Add plant-based milk, turmeric powder, nutritional yeast, salt and pepper and mix to combine
  3. In a pan, heat 1 tbsp of olive oil on medium/high heat and add the scrambled tofu mixture. Fry for 5-10 minutes, or until tofu becomes slightly golden. Avoid drying out the tofu too much by adding more plant-based milk if needed
  4. Serve on piece of sourdough toast or a bread of your choice
