Cherry Slice with NOGO Cranberry Jam

Made with yoghurt and low-fodmap NOGO Cranberry Jam for the moist texture, with chunks of cranberries, fresh cherries and hint of vanilla. It’s also made sugar-free with monk fruit sweetener + a boost of vanilla protein. 

Ingredients

Cake base:

  • 1 cup greek yoghurt
  • 1/2 cup NOGO Cranberry Jam
  • 1 tsp vanilla extract
  • 6 tbsp oil
  • 1 cup chopped cherries
  • 3/4 cup sugar
  • 1.5 cup gluten free flour (or substitute with 1/4 cup vegan vanilla protein)
  • 1 tsp gluten free baking powder
  • 1/2 tsp baking soda

Toppings: 1/2 cup white chocolate chips, melted + fresh cherries

Method

  1. Preheat the oven to 175 degrees
  2. Mix yoghurt, Cranberry Jam, vanilla, oil and chopped cherries in a bowl 
  3. In a separate bowl, mix sugar, flour, baking powder and baking soda 
  4. Add the wet mixture to the dry mixture and combine
  5. Poor the cake mix in a lined brownie tray
  6. Bake at 175 degrees for 30 minutes or until golden brown edges are formed
  7. Top with melted chocolate and fresh cherries
